Ingredientes

Vegetable Oil 1/2 cup
Mirepoix:
Onions 4 cups Peel & Dice
Leeks 2 cups Wash, Trim, Split & Dice
Celery 2 cups Wash & Dice
Carrots 2 cups Wash, Peel & Dice
Roux 1 cup (or as needed)
Milk, warm 3 gal Heat in steamer
Water 1 gal
Vegetable Base 2 cups
Salt & White Pepper To taste
Nutmeg, Ground 3tsp.

Direcciones

In hot tilt add mirepoix and sweat untill the onions translucent then set aside (can prep a day ahead). Puree vegetables in a food processor. Place water un tilt grill ass vegetable base. Then add roux to thicken. Add ouree vegetables the finish with warmed milk. Add nutmeg and salt & white pepper as needed.
