....But%20I%20didn't%20want%20the%20typical%20chicken%20and%20rice%20combo.%20Actually,%20I%20wasn't%20even%20sure%20exactly%20what%20kind%20of%20%22combo%22%20I%20wanted%20so%20I%20started%20poking%20around%20the%20fridge%20and%20pulled%20out%20the%20chicken%20and%20some%20broccoli.%20Next%20came%20the%20mushrooms%20and%20a%20lemon.%3C/p%3E%3Cp%3EThen%20I%20spied%20the%20white%20wine.....and%20well...with%20all%20those%20ingredients%20the%20capers%20were%20begging%20not%20to%20be%20excluded.%3C/p%3E%3Cp%3EHow%20could%20I%20say%20no%20to%20those%20cute%20little%20pea%20like%20balls?%3C/p%3E%3Cp%3EBtw....do%20capers%20remind%20you%20of%20horseradish%20in%20flavor%20or%20is%20that%20just%20me?%3C/p%3E%3Cp%3EAnd%20thus%20the%20Creamy%20Chicken%20Piccata%20Casserole%20was%20born.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350'%3C/p%3E%3Cp%3ESeason%20the%20chicken%20with%20salt%20and%20pepper%20and%20cook%20in%20a%20skillet%20with%20oil%20until%20done.%20Remove%20from%20pan%20and%20set%20aside.%3C/p%3E%3Cp%3EIf%20needed%20add%20a%20bit%20more%20oil%20and%20saute%20the%20mushrooms.%20Toss%20in%20the%20cooked%20broccoli.%3C/p%3E%3Cp%3EPour%20the%20lemon%20juice%20in%20a%20measuring%20cup....pour%20enough%20wine%20in%20with%20the%20juice%20to%20measure%203/4%20cup.%20Add%20to%20the%20mushrooms%20and%20broccoli.%20Add%20the%20milk%20and%20let%20simmer%20to%20heat%20through.%3C/p%3E%3Cp%3EStir%20in%20the%20parmesan%20cheese%20until%20melted.%3C/p%3E%3Cp%3EReturn%20the%20chicken%20to%20the%20pan.%20Stir%20in%20the%20capers.%3C/p%3E%3Cp%3EIn%20a%20large%20casserole%20dish,%20add%20the%20pasta%20and%20then%20pour%20the%20chicken%20mixture%20over%20the%20pasta.%20Top%20with%20some%20parmesan%20cheese.%3C/p%3E%3Cp%3EBake%20for%20about%2030%20minutes,%20until%20bubbly%20and%20golden%20brown.%3C/p%3E%3Cp%3EAnd%20that's%20it.%3C/p%3E%3Cp%3EOne%20of%20the%20reasons%20casseroles%20are%20so%20nice%20is%20because%20you%20can%20make%20just%20about%20any%20dish%20into%20some%20version%20of%20a%20casserole.%3C/p%3E%3Cp%3EAnother%20reason?%20Once%20it's%20all%20together%20and%20in%20the%20oven...you're%20done.%3C/p%3E){kind=link}
