.%20%20I'm%20happy%20to%20say%20that%20they%20turned%20out%20really%20well!%20%20(And%20we%20still%20have%20a%20lot%20of%20leftover%20turkey,%20so%20I%20might%20have%20to%20make%20more%20enchiladas!)%3C/p%3E%3Cp%3ESimmer%20first%20three%20ingredients%20in%20a%20frying%20pan%20until%20heated%20through.%20%20Add%20turkey,%20Taco%20seasoning,%20and%20salt.%20%20Scoop%20some%20of%20the%20mixture%20into%20each%20tortilla,%20top%20with%20grated%20cheese,%20roll%20them%20up%20and%20lay%20them%20seam-side%20down%20in%20a%20baking%20dish.%20%20Pour%20Enchilada%20Sauce%20Mix%20into%20water%20and%20bring%20to%20a%20boil,%20then%20reduce%20heat%20and%20simmer%20for%205%20minutes.%20%20Pour%20over%20enchiladas%20and%20top%20with%20more%20cheese.%20%20Bake%20at%20350%20F%20for%2015-20%20minutes.%20%20Top%20with%20green%20onions%20before%20serving.%3C/p%3E%3Cp%3EI%20really%20loved%20the%20refried%20beans%20-%20they%20were%20far%20less%20gelatinous%20than%20the%20canned%20refried%20beans%20you%20get%20from%20the%20store.%20%20%22Less%20gelatinous%22%20is%20always%20a%20good%20thing,%20unless%20you're%20making%20jello.%3C/p%3E%3Cp%3EI%20thought%20the%20kids%20would%20revolt%20at%20the%20sight%20of%20bean-filled%20tortillas%20smothered%20in%20sauce,%20but%20they%20ate%20them%20without%20any%20complaints.%20%20Even%20William!%20%20(He%20did%20scoop%20out%20some%20of%20the%20filling,%20but%20he%20didn't%20it%20without%20whining,%20and%20he%20ate%20the%20majority%20of%20it,%20so%20I%20think%20after%20those%20few%20months%20of%20horrible%20supper%20times%20with%20him,%20I%20have%20finally%20broken%20him!)%3C/p%3E%3Cp%3ESo%20this%20week%20we've%20eaten%20turkey%20dinners,%20turkey%20enchiladas,%20and%20turkey%20soup....%20and%20we%20still%20have%20a%20small%20roaster%20filled%20with%20leftover%20turkey.%20%20Remind%20me%20never%20to%20cook%20a%20whole%20turkey%20again%20unless%20we%20have%20company,%20because%20clearly%20our%20little%20family%20can't%20eat%20it%20all!%20%20(But%20damn%20the%20house%20smelled%20good%20on%20Monday%20night%20when%20that%20turkey%20was%20roasting!!!)%3C/p%3E){kind=link}
