.%20%20Put%20the%20windows%20up!%3C/p%3E%3Cp%3E%22Smell%20that?%22%20he%20asked.%20%20Although%20it%20sounded%20more%20like%20a%20command.%20%20%22That's%20Christmas.%22%3C/p%3E%3Cp%3EI%20took%20a%20whiff.%20%20Was%20the%20whole%20I-10%20corridor%20on%20fire?%3C/p%3E%3Cp%3EMany%20cane%20farmers%20burn%20their%20fields%20just%20before%20harvest.%20%20This%20burns%20off%20the%20%22trash%22--the%20leafy%20portions%20of%20the%20sugar%20cane%20plants.%20%20According%20to%20the%20LSU%20Agcenter,%20field%20burns%20reduce%20waste%20and%20the%20cost%20involved%20in%20harvesting.%20%20It's%20not%20without%20controversy%20due%20to%20the%20resulting%20smoke%20and%20ash.%3C/p%3E%3Cp%3EOne%20of%20The%20Husband's%20favorite%20childhood%20memories%20is%20smelling%20the%20burnt%20cane%20as%20his%20family%20drove%20to%20MaMa's%20house%20on%20Christmas%20Eve.%3C/p%3E%3Cp%3EI%20didn't%20grow%20up%20close%20enough%20to%20cane%20fields%20to%20smell%20the%20smoke,%20but%20I%20have%20my%20own%20associations.%3C/p%3E%3Cp%3EWhen%20I%20lived%20in%20Lafayette,%20I%20was%20too%20far%20from%20the%20fields%20for%20the%20smoke.%20%20But%20every%20fall%20when%20the%20burning%20started,%20my%20garden%20would%20be%20invaded%20by%20Southern%20green%20stink%20bugs.%20%20People%20told%20me%20they%20were%20driven%20out%20of%20the%20fields%20by%20the%20fires.%20%20I%20hated%20that!%20%20So%20while%20The%20Husband%20has%20this%20warm%20fuzzy%20memory%20of%20burning%20cane,%20sometimes%20when%20I%20think%20about%20sugar%20cane,%20all%20I%20smell%20is%20stink%20bug.%3C/p%3E%3Cp%3EBlech.%3C/p%3E%3Cp%3EBut%20there%20are%20good%20things%20I%20associate%20with%20sugar%20cane%20too.%3C/p%3E%3Cp%3EOne%20of%20my%20favorite%20novels,%20A%20Gathering%20of%20Old%20Men%20by%20Ernest%20J.%20Gaines,%20is%20set%20on%20a%20Louisiana%20sugar%20cane%20farm.%20%20And%20I'd%20much%20rather%20think%20about%20this%20novel%20than%20smell%20stink%20bugs.%20%20(I%20guess%20that's%20not%20much%20of%20an%20endorsement,%20though,%20is%20it?)%3C/p%3E%3Cp%3EOn%20The%20Boy's%20first%20trip%20to%20the%20beach,%20which%20was%20Grand%20Isle,%20I%20pointed%20out%20the%20sugar%20cane%20fields%20as%20we%20drove%20Hwy%2090.%20%20He%20was%20impressed%20that%20grass%20could%20grow%20so%20tall.%20%20Taking%20a%20look%20at%20the%20fields%20from%20an%20elevated%20part%20of%20the%20highway,%20he%20said,%20%22It%20looks%20like%20a%20giant's%20lawn!%22%20And%20it%20kinda%20did!%3C/p%3E%3Cp%3EMy%20great-grandpa%20grew%20up%20in%20a%20sugar%20cane%20growing%20community.%20%20He%20liked%20to%20tell%20me%20about%20how%20all%20the%20kids%20would%20follow%20the%20trucks%20carrying%20loads%20of%20sugar%20cane%20to%20the%20sugar%20mills.%20%20Cane%20would%20spill%20from%20the%20trucks%20and%20the%20kids%20would%20gather%20it%20up,%20chewing%20on%20the%20cane%20to%20extract%20the%20sweet%20juices.%3C/p%3E%3Cp%3ECane%20juice%20can%20be%20cooked%20down%20to%20produce%20cane%20syrup,%20something%20that's%20done%20by%20Steen's%20in%20Abbeville,%20LA.%20%20Steen's%20is%20known%20for%20their%20cane%20syrup...%3C/p%3E%3Cp%3Efrom%20Cajungrocer.comAnd%20their%20bright%20yellow%20label.%3C/p%3E%3Cp%3EPeople%20pour%20cane%20syrup%20over%20pancakes,%20biscuits,%20pain%20perdu%20(%22lost%20bread%22%20or%20French%20toast),%20and%20coush%20coush%20(or%20cush%20cush)--cooked%20cornmeal%20that%20resembles%20crumbly%20cornbread.%20%20%20I%20have%20to%20admit%20that%20I%20don't%20like%20these%20uses%20for%20it.%20%20Cane%20syrup%20is%20dark%20and%20think,%20almost%20like%20molasses,%20but%20sweeter%20and%20with%20a%20slight%20caramel%20taste.%20%20It's%20just%20too%20strong%20for%20me%20(I%20don't%20like%20pure%20maple%20syrup%20either).%3C/p%3E%3Cp%3EBut%20while%20I%20don't%20enjoy%20those%20traditional%20uses,%20I%20do%20like%20cane%20syrup%20in%20a%20traditional%20Cajun%20dessert:%20Gateau%20de%20Sirop%20(syrup%20cake).%20%20Gateau%20de%20Sirop%20is%20a%20simple,%20dark%20cake%20flavored%20with%20cane%20syrup.%20%20It's%20served%20as%20is%20or%20maybe%20with%20a%20plop%20of%20whipped%20cream%20or%20some%20extra%20cane%20syrup.%20%20But%20never%20icing.%3C/p%3E%3Cp%3EThe%20recipe%20I%20used%20from%20Nun%20Better:%20Tastes%20&%20Tales%20From%20Around%20a%20Cajun%20Table%20came%20out%20fluffy%20and%20airy.%20%20Some%20syrup%20cakes%20are%20more%20dense%20and%20heavy.%20%20This%20recipe%20used%20a%20mixture%20of%20baking%20soda%20and%20boiling%20water,%20which%20I've%20been%20told%20results%20in%20a%20light%20airy%20cake.%20%20But%20I've%20also%20been%20told%20that%20using%20boiling%20water%20results%20in%20a%20moist%20cake.%20%20All%20I%20know%20is%20that%20this%20cake%20was%20both!%3C/p%3E%3Cp%3EYou'll%20need:%3C/p%3E%3Cp%3ESugar,%20oil%20(or%20applesauce),%20eggs,%20cane%20syrup,%3C/p%3E%3Cp%3Ebaking%20powder,%20flour,%20salt,%20cinnamon,%3C/p%3E%3Cp%3Ebaking%20soda,%20&%20boiling%20water%3C/p%3E%3Cp%3EOptional%20ingredients:%3C/p%3E%3Cp%3Enuts%20and%20raisins%3C/p%3E%3Cp%3EThe%20dark%20liquid%20is%20the%20cane%20syrup.%3C/p%3E%3Cp%3EMix%20the%20eggs,%20oil%20(or%20applesauce),%20sugar,%20and%20syrup.%3C/p%3E%3Cp%3EThen%20add%20the%20dry%20ingredients.%3C/p%3E%3Cp%3ENot%20all%20syrup%20cakes%20call%20for%20cinnamon.%20%20I%20thought%20it%20was%20a%20good%20addition.%3C/p%3E%3Cp%3ENext,%20mix%20baking%20soda%20with%20boiling%20water%20and%20add%20to%20the%20batter.%3C/p%3E%3Cp%3EIf%20you%20want%20to%20use%20nuts%20and%20raisins,%20add%20them%20too.%3C/p%3E%3Cp%3EThe%20batter%20will%20be%20thin.%20%20That's%20ok.%20%20It%20should%20be.%3C/p%3E%3Cp%3EBake%20at%20350%20for%2035-40%20minutes.%3C/p%3E%3Cp%3ECheck%20out%20these%20air%20bubbles.%3C/p%3E%3Cp%3EG%C3%A2teau%20de%20Sirop%3C/p%3E%3Cp%3Efrom%20Nun%20Better:%20Tastes%20&%20Tales%20From%20Around%20A%20Cajun%20Table%3C/p%3E%3Cp%3ECombine%20sugar,%20oil,%20egg,%20and%20syrup%20and%20beat.%20Add%20baking%20powder,%20flour,%20salt,%20and%20cinnamon.%20In%20a%20separate%20container,%20add%20baking%20soda%20to%20boiling%20water.%20Pour%20water/soda%20mixture%20into%20batter.%20Nuts%20and%20raisins%20may%20be%20added%20at%20this%20time.%20Pour%20into%20a%20prepared%2013%20x%209%20pan.%20Bake%20at%20350%20for%2035-40%20minutes.%3C/p%3E){kind=link}
