  1. Sift all dry ingredients.
  2. Beat butter & sugars until light & fluffy.
  3. Add zest & candied ginger.
  4. Add dries & mix until combined.
  5. Roll into logs. wrap in parchment paper.
  6. Refrigerate overnight or freeze up to 3 hours.
  7. Cut into ½ inch slices.
  8. Bake @ 325 for 12 minutes or until center springs back when touched.
  9. Candied ginger can be substituted w/ toasted ground nuts.
  10. Ground ginger can be substituted with all cinnamon
