  • chic pea flour
  • 4 Tbsp. canola oil
  • 1/2 lb (about 280 grams) fish, filleted and boned
  • salt (rock salt)
  • 1/3 c. white wine

Direcciones

  1. Place fish on chopping board and lightly sprinkle with rock salt. Place chic pea flour (gluten free option) in n a flat tray. Dredge fish in chic pea flour, dusting both sides to proportionately cover the whole fish.
  2. Place a nonstick fry pan on medium heat. Pour oil into pan and increase the heat till movement can be seen in the oil. Place fish "nice side up" in the warm pan. Slide fish into pan (away from body). Turn once when floured sides are curling up and becoming a golden brown color. Continue to cook till nicely seared and golden brown on both sides of the fish.
  3. Add in white wine slowly to pan to deglaze.
  4. Place in a an oven heated to a very warm frying pan for about 10 min. Check by pushing flesh; when hard, fish is done. Season to taste and serve.
