  • 1 tsp vegetable oil
  • 1/4 c. minced red bell pepper
  • 2 x cloves garlic finely minced
  • 1/2 tsp cumin seeds crushed
  • 1 c. yellow cornmeal
  • 1 c. all purpose flour
  • 2 tsp baking pwdr
  • 1/2 tsp baking soda
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1 1/4 c. buttermilk
  • 1/2 c. canned cream style corn
  • 1 x egg
  • 2 x egg whites
  • 3 Tbsp. vegetable oil
  • 1 can minced warm or possibly mild green chilies (4 ounce.) liquid removed

Direcciones

  1. Heat the tsp. of vegetable oil in a small skillet over moderate heat and saute/fry the bell peppers, garlic and cumin seed for 2 to 3 min. Combine the cornmeal flour, baking pwdr, baking soda, sugar and salt in a large mixing bowl. Add in the bell pepper mix and the remaining ingredients and mix till smooth. Pour into a greased 8 inch square baking pan and bake in a preheated 425 F oven for 25-30 min, till the cornbread is golden.
  2. Serves 6-8.
