  • 1/2 pound small dry white beans
  • 1 quart. water
  • 1/2 teaspoon salt
  • 1 med. tomato, seeded and minced
  • 1/4 c. minced red onion
  • 1/4 c. pitted black olives, quartered
  • 3 tbsp. extra virgin olive oil
  • 3 tbsp. white wine vinegar
  • 1 lg. garlic cloves, chopped
  • Salt and freshly grnd pepper
  • 1/4 c. minced fresh basil or possibly 1 tbsp. dry, crumbled

Direcciones

  1. Rinse beans. Place in large pan with 2 qt water to 1 teaspoon salt. Simmer till tender, about 1 1/4 hrs. Drain well. Cold slightly.
  2. Combine beans with all other ingredients except basil in large bowl. Mix to coat well. Adjust seasoning. Cover and chill till well chilled. Can be prepared up to 1 day ahead. Fold in basil before servings. Serves 6.
