Receta Herbed White Bean Salad

Ingredientes
- 1/2 pound small dry white beans
- 1 quart. water
- 1/2 teaspoon salt
- 1 med. tomato, seeded and minced
- 1/4 c. minced red onion
- 1/4 c. pitted black olives, quartered
- 3 tbsp. extra virgin olive oil
- 3 tbsp. white wine vinegar
- 1 lg. garlic cloves, chopped
- Salt and freshly grnd pepper
- 1/4 c. minced fresh basil or possibly 1 tbsp. dry, crumbled
Direcciones
- Rinse beans. Place in large pan with 2 qt water to 1 teaspoon salt. Simmer till tender, about 1 1/4 hrs. Drain well. Cold slightly.
- Combine beans with all other ingredients except basil in large bowl. Mix to coat well. Adjust seasoning. Cover and chill till well chilled. Can be prepared up to 1 day ahead. Fold in basil before servings. Serves 6.
