%20Then%20she%20went%20to%20work.%3C/p%3E%3Cp%3EAs%20soon%20as%20she%20left%20my%20sister%20in%20law%20insisted%20that%20I%20made%20the%20muffins%20right%20away.%20I%20didn't%20think%20I%20should,%20but%20rather%20than%20argue%20or%20press%20the%20point,%20I%20did%20what%20she%20told%20me%20too.%20(I%20think%20she%20was%20trying%20to%20make%20me%20look%20incompetent!)%20%20Of%20course%20it%20was%20the%20wrong%20thing%20to%20do%20.%20.%20.%20but,%20c'est%20la%20vie!%20Once%20we%20warmed%20them%20up%20they%20were%20completely%20edible%20and%20no%20real%20harm%20was%20done.%3C/p%3E%3Cp%3EI%20think%20cornbread%20is%20much%20better%20when%20eaten%20warm.%20Ditto%20the%20muffins.%20That%20way%20if%20you%20want%20to%20spread%20them%20with%20butter,%20it%20melts%20into%20all%20of%20those%20lovely%20little%20crevices%20and%20tunnels.%3C/p%3E%3Cp%3EThese%20particular%20muffins%20are%20extra%20moist%20and%20extra%20special.%20They%20are%20lightly%20sweetened%20and%20flavoured%20with%20honey%20.%20.%20.%20I%20like%20English%20Wildflower%20honey,%20myself.%3C/p%3E%3Cp%3EIt%20tastes%20like%20a%20warm%20sunny%20day!%3C/p%3E%3Cp%3EI%20like%20to%20tuck%20in%20a%20little%20surprise%20as%20well,%20that%20never%20fails%20to%20delight%20the%20eater.%20%20I%20hide%20a%20sweet%20little%20nugget%20of%20strawberry%20or%20raspberry%20jam%20in%20the%20middle%20.%20.%20.well%20%20.%20.%20.%20%20sometime,%20it%20does%20sort%20of%20sink%20to%20the%20bottom,%20but%20no%20mind%20.%20.%20.%20it's%20tasty%20nonetheless.%20%20It%20goes%20so%20very%20well%20with%20that%20little%20bit%20of%20crunch%20from%20the%20cornmeal%20and%20the%20moist%20butteriness%20of%20the%20whole%20muffin.%3C/p%3E%3Cp%3ECornbread%20muffins,%20filled%20with%20jam%20and%20baked%20until%20all%20scrummily%20toasty%20golden%20brown.%20%20They're%20a%20good%20thing.%20%20%20In%20fact%20.%20.%20.I%20think%20that%20they're%20the%20best!%3C/p%3E%3Cp%3E*Honey%20Cornbread%20Surprise%20Muffins*%3C/p%3E%3Cp%3EMakes%2012%20large%20muffins%3C/p%3E%3Cp%3EIf%3C/p%3E%3Cp%3Eyou%20like%20cornbread%20muffins,%20you%20will%20love%20these%20tasty%20little%20babies.%3C/p%3E%3Cp%3EMoist%20and%20delicious,%20with%20the%20hidden%20surprise%20of%20a%20nugget%20of%20jam%20in%20the%3C/p%3E%3Cp%3Ecentre.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20200*C/400*F/%20gas%20mark%206.%20%20Line%20a%2012%20cup%20muffin%20tin%20with%20paper%20liners.%20%20Set%20aside.%3C/p%3E%3Cp%3EWhisk%3C/p%3E%3Cp%3Ethe%20flour,%20cornmeal,%20salt,%20baking%20powder%20and%20sugar%20together%20in%20a%20large%3C/p%3E%3Cp%3Ebowl.%20%20Beat%20together%20the%20milk,%20eggs,%20melted%20butter,%20and%20honey.%20%20Make%20a%3C/p%3E%3Cp%3Ewell%20in%20the%20middle%20of%20the%20dry%20ingredients.%20%20Add%20the%20wet%20all%20at%20once%20and%3C/p%3E%3Cp%3Estir%20only%20to%20moisten%20the%20dry%20ingredients.%20%20Spoon%20into%20the%20prepared%3C/p%3E%3Cp%3Emuffin%20cups,%20filling%20about%202/3%20full.%20%20Drop%20a%20tsp%20of%20jam%20onto%20the%20top%20of%3C/p%3E%3Cp%3Eeach.%20%20(It%20will%20sink%20as%20the%20muffins%20bake.)%3C/p%3E%3Cp%3EBake%20for%2015%20minutes,%20until%20well%20risen%20and%20golden%20brown.%20%20Serve%20warm,%20with%20or%20without%20butter.%20%20It's%20up%20to%20you!%3C/p%3E%3Cp%3ENote:%3C/p%3E%3Cp%3EYou%20can%20leave%20the%20jam%20out%20completely%20if%20you%20wish.%20We%20love%20that%20tasty%3C/p%3E%3Cp%3Enugget%20of%20fruity%20sweetness%20in%20ours%20though.%20%20It%20makes%20them%20special!%3C/p%3E){kind=link}
