  1. Mix Large eggs and sugar together.
  2. Heat butter and chocolate together and add in to mix. Mix in flour and combine ingredients well.
  3. Make ganache with white chocolate and cream. To make the ganache, heat the white chocolate and add in the cream and let it cold. Form into balls and cold. Then wrap in cling film and chill.
  4. Butter 6 ramekin dishes and put a piece of greaseproof paper on the bottom of each. Fill with mix and a little ganache in the centre.
  5. Cook at 200C for 15 min, demould, sprinkle with icing sugar and serve straight away.
  6. Sauce anglaise:Boil up lowfat milk and in a bowl whisk egg yolks and sugar. Pour a little lowfat milk on the yolks and mix and then add in the rest of the lowfat milk and cook on a low heat till the mix thickens and coats the back of a spoon.
  7. Put the mix through a chinois, add in a little cream to stop the cooking.
  8. Serve the pudding with exotic fruits.
  9. NOTES : Makes 6 puddings
