  1. In a large bowl, soak the oatmeal in lowfat milk for an hour. Add in melted butter, egg, brown sugar and raisins. Stir till well mixed.In a medium bowl, mix dry ingredients together. Add in to the oatmeal mix. Stir till flour is moist. Batter should be lumpy.
  2. Spray muffin pans with vegetable cooking spray or possibly line with paper liners. Fill muffin tins 2/3 full with batter.
  3. Bake at 400 degrees for 15 to 20 min, or possibly till done. Makes 12 medium sized or possibly 24 mini-muffins.
