Receta Oatmeal Raisin Muffins

Ingredientes
- 1 c. rolled oats
- 1 c. skim lowfat milk
- 1/2 c. butter, melted
- 1 egg, slightly beaten
- 1/4 c. brown sugar
- 1/2 c. raisins
- 1 c. whole wheat flour
- 1 1/2 teaspoon baking pwdr
- 1 1/2 teaspoon baking soda
Direcciones
- In a large bowl, soak the oatmeal in lowfat milk for an hour. Add in melted butter, egg, brown sugar and raisins. Stir till well mixed.In a medium bowl, mix dry ingredients together. Add in to the oatmeal mix. Stir till flour is moist. Batter should be lumpy.
- Spray muffin pans with vegetable cooking spray or possibly line with paper liners. Fill muffin tins 2/3 full with batter.
- Bake at 400 degrees for 15 to 20 min, or possibly till done. Makes 12 medium sized or possibly 24 mini-muffins.
