  • 1 sm onion diced
  • 1 sm red pepper diced
  • 1 tsp paprika
  • 1 Tbsp. cumin
  • 1 tsp chili pwdr
  • 4 Tbsp. water (4 to 6)
  • 1 lb hard tofu frzn and thawed,
  •     or possibly fresh
  • 2 Tbsp. ketchup
  • 2 Tbsp. barbecue sauce hickory or possibly
  •     any spicy sauce works well
  • 6 x corn tortillas (6 to 8)
  •     or possibly taco shells

Direcciones

  1. Saute/fry onion and red pepper with 1 Tbsp water in large skillet, adding paprika, cumin, and chili pwdr as vegetables begin to soften. Add in water and stir well to allow vegetables to cook through. Crumble tofu into skillet. (if using forzen and defrosted tofu be sure to squeeze out excess water.) Add in ketchup and barbecue sauce and stir well. Saute/fry for 5 min.
  2. Serves 3 to 4. Garnish as desired.
