  1. Directions: Combine the 2 Tablespoons extra virgin olive oil, garlic, soy sauce, and shrimp.
  2. Allow to marinate for 1 hour. Heat a wok till warm. Heat the 1 Tablespoons of extra virgin olive oil in a wok over medium heat. Saute/fry the chopped garlic and ginger. Add in the shrimp and toss to coat and cook. Stir in the apricot preserves and hoisin sauce. Continue to toss till shrimp are cooked through. Finish with the sesame seeds, tossing to incorporate.
