%20and%20we%20won't%20be%20eating%20many%20things%20that%20come%20from%20the%20oven%20and%20so%20I%20thought%20I%20would%20take%20the%20opportunity%20to%20get%20one%20more%20oven%20bake%20in%20before%20that%20happens,%20and%20we%20start%20eating%20salads.%3C/p%3E%3Cp%3EI%20love%20gratins%20.%20.%20.%20%20you%20can%20turn%20almost%20any%20vegetable%20into%20a%20gratin.%20%20They%20are%20simply%20thinly%20sliced%20veg,%20layered%20in%20a%20shallow%20casserole,%20covered%20with%20seasoned%20cream,%20and%20cheese%20(yes%20please!)%20and%20baked%20until%20the%20vegetables%20are%20deliciously%20tender,%20the%20cream%20has%20thickened%20into%20a%20rich%20unctuous%20sauce%20.%20.%20.%20and%20the%20cheese%20is%20all%20scrummily%20golden%20brown%20on%20top.%3C/p%3E%3Cp%3EOn%20this%20day%20I%20added%20the%20glorious%20treat%20of%20a%20middle%20layer%20of%20fried%20bacon%20and%20onions%20.%20.%20.%20because%20I%20could,%20and%20because%20I%20had%20some%20back%20bacon%20that%20needed%20using%20up%20as%20well%20.%20.%20.%20and%20because%20.%20.%20.%20%20well,%20it's%20BACON!%20%20Why%20not!%3C/p%3E%3Cp%3EBacon%20has%20that%20thing%20about%20it%20you%20know%20.%20.%20.%20that%20thing%20where%20it%20automatically%20makes%20everything%20taste%20somehow%20better.%20%20Even%20sweet%20things.%20%20%20Candy%20coated%20bacon.%20%20Yum.%20%20%20Chocolate%20dipped%20bacon.%20%20Yum.%20%20%20Bacon%20Jam.%20%20Yum.%20%20Bacon%20Cookies.%20Yum.%20%20Don't%20laugh,%20I've%20found%20recipes%20for%20all%20these%20things%20which%20sound%20crazily%20delish%20.%20.%20.%20but%20I%20digress%20.%20.%20.%3C/p%3E%3Cp%3ETwo%20Potato,%20Bacon%20and%20Thyme%20Gratin.%20%20Delicious.%20%20%20Layers%20of%20tender%20sweet%20and%20white%20potatoes,%20with%20a%20middle%20layer%20of%20bacon,%20onions%20and%20thyme%20.%20.%20.%20%20doused%20in%20cream,%20slathered%20with%20cheese,%20and%20baked%20until%20it%20is%20meltingly,%20richly,%20unctuously%20delicious.%20%20%20What%20more%20could%20a%20person%20ask%20for%20.%20.%20.%20I%20reckon%20not%20much!%20%20Well,%20maybe%20a%20hunk%20of%20crusty%20bread%20to%20mop%20all%20those%20tasty%20juices%20.%20.%20.%20sigh%20.%20.%20.%3C/p%3E%3Cp%3E*Two%20Potato,%20Bacon%20and%20Thyme%20Gratin*%3C/p%3E%3Cp%3EServes%206%20to%208%3C/p%3E%3Cp%3EBubbling%20and%20creamy%20on%20the%20insides%20and%20crisp%20and%20golden%20on%20the%20outside%20with%20cheese%20and%20a%20hidden%20layer%20of%20bacon%20and%20onion%20in%20the%20middle.%3C/p%3E%3Cp%3EWhat's%20not%20to%20like?%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20200*C/400*F/%20gas%20mark%206%20%20Butter%20a%20shallow%20baking%20dish,%20or%20gratin%20dish.%20%20Set%20aside.%3C/p%3E%3Cp%3EHeat%20the%20olive%20oil%20in%20a%20large%20skillet.%20%20%20Add%20the%20bacon%20and%20fry%20for%20about%205%20minutes%20until%20crispy.%20%20Stir%20in%20the%20onion,%20and%20cook%20for%20several%20minutes%20longer%20to%20soften%20the%20onion.%20%20Stir%20in%20the%20garlic%20and%20thyme.%20%20%20Cook%20until%20very%20fragrant.%3C/p%3E%3Cp%3EBegin%20to%20layer%20the%20potatoes%20in%20the%20casserole%20dish,%20layering%20in%20half%20of%20them.%20%20Season%20lightly%20with%20salt%20and%20pepper%20as%20you%20go,%20bearing%20in%20mind%20that%20bacon%20is%20salty.%20%20%20Once%20you%20have%20half%20the%20potatoes%20in.%20%20Spread%20over%20the%20cooked%20bacon%20and%20onion%20mixture.%20%20Top%20with%20the%20remaining%20potatoes,%20seasoning%20lightly.%20%20Pour%20the%20cream%20over%20top.%20%20Cover%20tightly%20with%20foil%20and%20place%20into%20the%20heated%20oven.%20%20Bake%20for%2045%20minutes.%20%20Uncover%20and%20sprinkle%20on%20the%20cheeses.%20%20%20Bake%20for%20a%20further%2030%20to%2035%20minutes,%20until%20the%20potatoes%20are%20tender%20and%20the%20casserole%20is%20lightly%20browned%20and%20a%20bit%20crispy%20on%20top.%20%20Serve%20warm.%3C/p%3E){kind=link}
