I am a Southern boy through and through. I was raised on chicken fried in bacon grease. Turnip greens, pinto beans, stewed potatoes with beef tail, poke salad and the list goes on and on. Granny and mom made their own pickles and sauerkraut. Granny had a slab of bacon and country ham that hung on the back porch. The apples from the apple tree we sat under all summer long were pealed, sliced and frozen. So were the peaches. How many of ya'll have ever had frozen peaches with all that sugar syrup frozen? Now that is eating!!!!
Needless to say, two years ago when I was 49 I had a heart attack. So we're learning how to cook healthier. We use ham bullion to season our vegetables. We don't add salt. We use fat free milk. NO it does not taste the same. But we learn to accept the change because it is the right thing to do. Now if Mom messes up and fries the chicken in bacon grease and saves me a piece along with some banana pudding, HEY! who am I to point out her mistake. That just wouldn't be Southern.
You can tell your neighbor that her cornbread is awful. You can tell your mama that the neighbors cornbread is awful. BUT DON'T YOU EVER tell your mama that her cornbread is awful!!! You might not get anything else for a LONG LONG LONG time!!!
I can remember when Donna and I were first married. (That was thirty years ago!!!) She noticed that I didn't eat her cornbread. But I would go over to mom's and eat a whole pone of her cornbread. Donna's people are from South Carolina and they put sugar in their cornbread. YUK!! That's cake. I made the mistake of telling her that it didn't taste good. "Well you can just go get ALL your food over at your mom's from now on!!!!" I learned REAL quick, how it worked!!! lol
