Call it luck for the quarter plus of Americans that suffer with food sensitivities that Chef Tracey Bloom discovered that she has food intolerances, too. A graduate of the Culinary Institute of America, Tracey is well known in the Atlanta culinary scene, having worked in the area’s finest restaurants including 103 West, Table 1280 and Rays Restaurants. Tracey has appeared on the Weather Channel, CNN and competed on Season 7’s Top Chef. After being diagnosed with non-celiac gluten sensitivity in mid 2012, Tracey did what any accomplished chef would do – she developed a new style of cooking, free cuisine, that innovates gluten-free and allergy friendly ingredients in unique, delicious ways. Tracey is the co-founder and executive chef of Free Cuisine – a gluten-free and allergy friendly food & lifestyle consultancy and product consortium.
