Ingredientes

  • 5 lb bag of white potatoes (Yukon Golds it will look polka dotted) butter salt and white pepper
  • 8 ounce small curd cottage cheese
  • 4 ounce lowfat sour cream crushed soda crackers size of bread crumbs

Direcciones

  1. Butter casserole dish. Peel, boil and mash potatoes using lots 'o' butter.
  2. Flavor with salt and pepper to taste. Stir in the lowfat sour cream. Gently mix in the cottage cheese. Put into casserole. Top with a dusting of the crushed crackers and drizzle generously with butter. Cover and chill up to 3 days. To Finish
  3. Preheat oven to 350F. Bake uncovered for 30 min.
