- 1 cup unsweetened cocoa (I recommend Ghiradelli)
- 1 and 1/2 tsp xantham gum (available via Bob's Red Mill)
- 2 tsp baking powder
- 2 tsp baking soda
- 1 tsp salt
- 2 tsp vanilla
- 2 tsp decaf or regular instant coffee granules
- 4 extra large/jumbo eggs, beaten
- 1 and 1/2 cups agave nectar
- 1 and 1/2 cups oil (I recommend Mazola Vegetable Plus! with Omega 3s)
- 2 cups unsweetened applesauce
- optional (12 oz. chocolate chips)
