Ingredientes
- 2 x Granny Smith apples cored, and thinly sliced
- 2 x celery ribs thinly sliced on the diagonal
- 6 x radishes thinly sliced
- 1/4 head red cabbage shredded
- 3 x scallions thinly sliced on the diagonal
- 1 x fresh cayenne pepper thinly sliced, (optional) Juice of 2 lemons
- 1/4 c. extra virgin olive oil
- 1 bn mint stemmed, and roughly minced Salt to taste Freshly-grnd black pepper to taste

- Place everything in a large bowl and toss gently to combine. Serve at once.
- This recipe yields 6 servings.
