Receta Apple Bran Muffins
We are muffin addicts at our house! There is nothing better to me than a warm muffin and a latte! I omitted the oil in the recipe, substituted it with applesauce and this muffin has the perfect consistency. Healthier and tasty, a winning combination!

Ingredientes
- 1 cup apples, peeled and chopped
- 1 tablespoon sugar
- 1 tablespoon water
- 1 teaspoon cinnamon
- 1/2 cup milk
- 1/3 cup applesauce
- 1 egg, lightly beaten
- 1 teaspoon vanilla
- 1 cup bran morsels (such as Bran Buds)
- 1 1/4 cup flour (can use whole wheat)
- 1/3 cup firmly packed brown sugar
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
Direcciones
- Cook the apples, sugar, water and 1 teaspoon cinnamon over low heat until apples are softened. Mix milk, applesauce, eggs and vanilla in a bowl. Dump in the bran morsels and let sit 2 minutes. Mix in sugar, baking powder, cinnamon, salt and flour. Stir until all ingredients are combined. Add cooked apple mixture and stir. Spoon into 12 prepared muffin tins. Bake at 400 for 15 minutes. Makes 12 muffins.
