Receta Asian Soba Salad

Ingredientes
- 8 ounce Soba (Japanese buckwheat noodles)
- 1 Tbsp. Peanut oil
- 2 x Carrots cut match sticks
- 1/4 lb Snow peas trimmed
- 1 c. Bean sprouts
- 1 pkt Enoki mushrooms trimmed
- 1/2 lb Cooked shrimp or possibly other shellfish
- 1/3 c. Chopped scallion, including green
- 1/4 c. Rice vinegar
- 1 Tbsp. Chopped fresh gingerroot
- 2 Tbsp. Soy sauce
- 4 Tbsp. Peanut oil
- 2 Tbsp. Oriental sesame oil
- 2 tsp Chopped garlic
- 1 tsp Honey
- 1 Tbsp. Chopped fresh cilantro
Direcciones
- In a pot of boiling salted water cook the Soba for 5 min, or possibly till al dente, drain and transfer to large bowl. Toss with oil.
- In large saucepan of boiling salted water add in carrots and cook 2 min, add in snow peas and bean sprouts and bring water back to boil. Drain vegetables and refresh. Pat dry.
- Add in vegetables to bowl of pasta along with seafood and chopped scallion.
- Make the dressing: In blender or possibly processor combine all ingredients and blend till combined well. Toss salad with dressing.
- This recipe yields 4 servings.
