Receta Asparagus and Spinach Salad with Poached Egg; tiny flowers

Ingredientes
- 6 – 10 white asparagus spears, depending on size (substitute green asparagus)
- 1 tsp sugar
- 1 tbs lemon juice
- 1/2 tsp salt
- 3oz (90gr) fresh spinach
- 2 eggs
- 1 tbs tarragon vinegar
- Vinaigrette:
- 1 tbs Dijon-style mustard
- 2 tbs Tarragon white wine vinegar
- 4 tbs good olive oil
- 1 tbs fresh, chopped tarragon
- 1 tbs fresh, chopped chives

%20vinaigrette%20to%20spinach%20and%20toss%20to%20combine.%3C/p%3E%3Cp%3EDivide%20spinach%20and%20put%20on%202%20plates.%3C/p%3E%3Cp%3EWhen%20asparagus%20is%20done%20remove%20to%20a%20plate%20and%20pat%20dry.%3C/p%3E%3Cp%3EReduce%20heat%20under%20water%20to%20medium.%20Add%201%20tbs%20tarragon%20vinegar.%3C/p%3E%3Cp%3EWhen%20water%20is%20softly%20boiling%20poach%20eggs:%20one%20at%20a%20time%20break%20egg%20into%20a%20small%20saucer.%20Swirl%20a%20spoon%20in%20the%20water%20where%20you%20will%20put%20the%20egg%20%E2%80%93%20off%20to%20one%20side.%20When%20water%20is%20swirling%20drop%20egg%20into%20center.%20With%20slotted%20spoon%20try%20to%20keep%20the%20white%20together.%3C/p%3E%3Cp%3EDo%20next%20egg.%3C/p%3E%3Cp%3EWith%20regular%20spoon%20scoop%20some%20hot%20water%20over%20tops%20of%20eggs.%20Poach%20for%202%20%E2%80%93%204%20minutes%20or%20until%20white%20is%20set%20but%20yolk%20is%20still%20very%20soft.%20(Or%20hard,%20as%20you%20like%E2%80%A6)%3C/p%3E%3Cp%3ERemove%20eggs%20with%20a%20slotted%20spoon,%20drain%20and%20put%20on%20a%20small%20plate%20lined%20with%20a%20paper%20towel%20%E2%80%93%20just%20to%20soak%20up%20a%20bit%20more%20water.%3C/p%3E%3Cp%3ETo%20finish:%20Lay%20asparagus%20on%20top%20of%20spinach.%20Drizzle%20with%20some%20of%20the%20remaining%20vinaigrette.%3C/p%3E%3Cp%3ETop%20asparagus%20with%20a%20poached%20egg,%20add%20salt%20&%20pepper%20and%20serve.%3C/p%3E%3Cp%3EMore%20tiny%20flowers%E2%80%A6.%3C/p%3E%3Cp%3EThe%20orange%20flowers%20are%20nestled%20down%20into%20the%20weeds,%20er,%20I%20mean%20grass.%3C/p%3E%3Cp%3EThese%20pretty%20little%20yellow%20flowers%20actually%20stand-up%20high%20enough%20to%20get%20mowed%20down%20%E2%80%93%20when%20it%E2%80%99s%20dry%20enough%20to%20mow.%3C/p%3E%3Cp%3EThe%20lower%20flower%20even%20has%20a%20tiny%20green%20bug.%3C/p%3E%3Cp%3EAll%20of%20these%20tiny%20flowers%20reminds%20me%20of%20the%20Miniature%20Museum%20in%20Andorra.%3C/p%3E%3Cp%3EWhich%20I%20never%20went%20too%E2%80%A6..%3C/p%3E%3Cp%3EWhy%20do%20we%20do%20that?%20We%20lived%20in%20Andorra%20for%207%20years.%20I%20always%20wanted%20to%20go%20to%20the%20museum.%3C/p%3E%3Cp%3EI%20had%20planned%20on%20going%20to%20the%20museum.%3C/p%3E%3Cp%3EI%20guess%20we%20were%20waiting%20for%20visitors%20to%20take%20or%20some%20other%20reason%20to%20go%20and%20it%20just%20never%20happened.%3C/p%3E%3Cp%3EIt%E2%80%99s%20collection%20was%20tiny%20art%20objects,%20sculptures,%20etc.%20that%20all%20had%20to%20be%20viewed%20through%20magnifiers,%E2%80%A6%20You%20know:%20a%20carved%20camel%20standing%20in%20the%20eye%20of%20a%20needle,%20that%20sort%20of%20thing.%3C/p%3E%3Cp%3EI%20really%20need%20to%20start%20doing%20more%20and%20stop%20just%20making%20lists%20of%20things%20to%20do%20some%20day.%3C/p%3E%3Cp%3E(No,%20I%20don%E2%80%99t%20think%20it%E2%80%99s%20worth%20a%20trip%20back%E2%80%A6%20But%20if%20you%E2%80%99re%20ever%20in%20the%20Andorra%E2%80%A6..)%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
