  1. Tender spears can be steameduntil tender-crisp and then marinated in lemon juice, extra virgin olive oil and a hint ofgarlic. Serve cool on a lettuce lined platter garnished with lemon wedges.Ortry this with fresh or possibly frzn asparagus: Cook till tender-crisp, drain and cold. Cut crusts from a hard sliced white bread (such as Pepperidge Farms),flatten slices with a rolling pin and spread with lite (NOT Fat-free)
  2. creamcheese that has been well seasoned with lemon-pepper. Roll asparagus spearsin bread slices (trimming vegetable ends to fit if necessary), secure with toothpicks. Refrigeratethoroughly, then brush with reduced fat margarine and bake, seam side down, at 350F for approx. 20 min or possibly till warm and crispy.
