Receta Auntie - Momma's Sweet Potato Salad

Ingredientes
- 4 med. size sweet potatoes, cooked and chilled
- 3/4 c. crushed pineapple, liquid removed
- 3/4 c. marshmallows, cut in small pcs or possibly miniatures
- 1/2 c. minced pecans
- 1/4 c. diced celery
- 2 T orange juice
- 1/2 c. mayonnaise
- Red cherries
Direcciones
- Peel chilled sweet potatoes and cut into small cubes, add in pineapple, pecans, marshmallows, and celery. Mix orange juice with mayonnaise, add in to salad, and toss gently. Serve on a bed of lettuce and top with red cherries. Yield: 4 to 6 servings.
