Receta Autumn Survival Comfort Bars

The original name for this recipe was "survival bars", which originated in the fact that my partner used to make them for me during stressful, time-crunch periods in university. However, the name is a little misleading as there are many super calorie-nutrient rich bars out there also called survival bars. While fairly healthful, these highly flavourful bars offer a different kind of comfort! They are a splendid mix of a granola bar and muffin. We often dip them into fruit yogurt in the morning. They also freeze well.

Note: this photo is of a carrot variety, but the end result looks quite similar with nuts and dried fruit instead of carrots.

  1. Half an hour before you begin, soak the raisins and cranberries in warm water to plump the fruit.
  2. Heat oven to 350F.
  3. Mix ingredients well to create a thick, even batter.
  4. Press the mixture into a greased pan. Square, deeper pans seem to work better.
  5. Bake for 15-20 minutes until the tops are light golden brown. Optimal time seems to be 17 minutes for our oven.
  6. Place on to cooling rack for 10 minutes before serving.
