Receta Baby New Potatoes With Tomato Topping

Ingredientes
- 3 lb baby new potato Tomato Topping
- 2 Tbsp. extra virgin olive oil
- 2 clv garlic, crushed
- 1 x leek, minced
- 3 c. crushed tomato
- 1 Tbsp. tomato, paste
- 1 Tbsp. sugar
- 1 Tbsp. fresh oregano, minced
- 2 Tbsp. fresh basil, minced
Direcciones
- Clean and scrub new potatoes and place in foil packet. Brush potatoes with extra virgin olive oil and seal packet.
- Heat on medium-high grill for 30 min.
- Remove potatoes from foil and top with tomato topping and fresh basil for garnish.
- Tomato Topping:On side burner heat oil in a medium skillet.
- Add in garlic and leek and cook for 6-8 min, stirring till leek is soft.
- Add in tomatoes, tomato paste and sugar. Stir. Reduce heat and simmer uncovered for 5 min.
- Stir in fresh herbs.
