  • 2 lb bowfin fillets - (to 3) cut bite sized
  • 1/2 c. peanut oil
  • 2 c. minced onion
  • 1 c. minced green pepper
  • 8 x garlic cloves minced
  • 1 can diced tomatoes and green chilies - (10 ounce)
  • 1 can tomato sauce - (8 ounce)
  • 2 c. water
  • 1 can sliced mushrooms - (4 ounce)
  • 1/2 c. minced green onion tops
  • 1/4 c. minced parsley
  • 1/4 tsp cayenne pepper
  • 1 tsp salt
  • 1 tsp freshly-grnd black pepper Warm cooked rice for serving

Direcciones

  1. Heat peanut oil in a heavy pot, and fry fish pcs 2 to 3 min.
  2. Remove fish from oil, and add in minced onion, green pepper and garlic. Saute/fry till tender, and drain oil.
  3. Add in diced tomatoes and green chilies, tomato sauce, water and fish, and bring to a boil. Lower heat and simmer 45 min.
  4. Add in remaining ingredients, and continue cooking over low heat for 15 min. Serve warm over cooked rice.
