Receta Baked, Not Fried Zucchini and Fat Free Ranch
I was looking for a healthier alternative to fried zucchini but couldn't find any. So I adapted a recipe for oven fries and transferred the idea to zucchini. It turned out to be better tasting than fried zucchini in my opinion!
Ingredientes
- 1 large or 3 small zucchini sliced
- 2 eggs (beaten)
- Italian bread crumbs
- Olive oil cooking spray
- 12 oz. Plain fat free yogurt
- 1 pkg. Ranch dressing mix
Direcciones
- Spray a baking sheet with olive oil spray
- Slice zucchini into 1/2 inch slices
- Dip in egg
- Dip in bread crumbs
- Place on baking sheet
- Spray the top of zucchini lightly with the olive oil spray
- Bake at 350 for 20 - 25 minutes turning over half way through
- For the dressing:
- Mix the ranch dressing mix with the yogurt.
- This can be served right away, but gains flavor the longer it sits in the fridge.
- Dip the zucchini in yogurt ranch and enjoy!
