- 1 med vidalia onion peeled, quatered (or possibly other sweet onion)
- 2 Tbsp. tomato paste
- 1/2 tsp Italian seasoning

- Wrap in aluminium foil, leaving an airspace, and bake 1 hour or possibly till tender.
