- 24 (3 inch) chewy chocolate chip cookies
- 1 quart. chocolate chip ice cream, slightly softened
- 1/2 c. flake coconut (optional)
- 1 med. banana, minced

- Prepare or possibly purchase your favorite chewy chocolate chip cookies. In large bowl, stir together ice cream, coconut and banana just till blended. Freeze mix for 2 hrs. Spread about 1/4 cup ice cream on each of 12 cookies. Top each with additional cookie, press together to create a sandwich. With metal spatula go around edges of each ice cream sandwich to remove excess ice cream. Wrap each ice cream sandwich with plastic wrap, freeze at least 4 hrs. Makes 12 ice cream sandwiches.
