Receta Banana Bran Muffins
These muffins are delicious, and so healthy! Over time I have tweaked the original recipe until I got it just right and this version is the keeper!
Ingredientes
- 1 large egg
- 3/4 cup buttermilk
- 1/4 cup canola oil
- 3/4 cup mashed ripe bananas (about 2 1/2 medium size)
- 1/2 cup brown sugar
- 1 cup bran cereal (I use All Bran)
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/3 cup finely chopped walnuts
Direcciones
- Set oven to 400 degrees F. Spray muffin baking pan with vegetable spray.
- Beat egg in medium size bowl. Stir in buttermilk, oil, bananas, brown sugar and bran cereal; allow mixture to stand 5 minutes to soften bran.
- Meanwhile in small bowl stir together flour, baking powder, baking soda, cinnamon and salt. When bran mixture has softened add flour ingredients all at once and stir just until flour is incorporated.
- Stir in walnuts. Fill muffin cups 3/4 full and bake 18-20 minutes until tops are lightly browned.
