I've been making this banana bread for years, making small changes here and there. It's a great one to make with the kids, and enjoy hot out of the oven! You can make it into muffins as well, just adjust the cook time accordingly (~20 minutes for full-size muffins).

  1. Grease a bread loaf pan and set aside. In a medium mixing bowl combine the flours, baking powder, baking soda, cinnamon, salt, and make a well in the center.
  2. In a separate bowl combine the egg, bananas, sugar, oil and lemon zest.
  3. Add egg mixture all at once to dry mixture. Stir just till moist. Fold in nuts, if desired.
  4. Spoon batter into the prepared pan. Bake at 350 for 50 to 55 minutes (or convection bake at 330 for 40 minutes). Bread is done when a knife or toothpick inserted near center comes out clean.
  5. Cool in pan on a wire rack for 10 minutes.
  6. Optional: You can also sprinkle brown sugar and/or chopped pecans on top of the bread before cooking, for added tastiness!

    This was tasty (we made it as muffins which cooked in about 14 minutes at 350) and skipped the nuts. It is also very easy and quick to make which is great!
