  2. 2. Add in rice, stirring to coat. Cook for 1 minute, stirring occasionally. Stir in apple juice, mixing well to combine. Stir in water. Cover and lower heat to medium-low. Simmer, tightly covered, for about 40 min, till rice is tender and water is absorbed.
