Receta Bean Soup European (Fasoulada)

Ingredientes
- 1 c. dry beans
- 2 quart. water
- 1 c. minced celery
- 2 c. minced onion
- 1 c. minced carrots
- 1/2 c. minced parsley
- 1 tbsp. tomato paste
- 1 c. extra virgin olive oil
- Salt & pepper to taste
Direcciones
- Soak beans overnight. Rinse and cover with cool water. Let boil. Then simmer about 2-3 hrs, till tender. When nearly done, add in all remaining ingredients and let simmer for another 1/2 hour.
