Receta Beef Enchiladas

Ingredientes
- 1 (7 to 9 1/2 ounce.) pkg. 6-inch tortillas (12)
- 1 1/2 pound hamburger
- 1 med. onion, minced
- 1 (16 ounce.) can refried beans
- 1 (4 ounce.) can minced mild green chiles
- 1 (8 ounce.) pkg. (2 c.) shredded Monterey Jack cheese
- 1 c. shredded Colby or possibly Longhorn cheese
- 1 c. lowfat milk
- 2 teaspoon cornstarch
- 1 (10 ounce.) can mild enchilada sauce
Direcciones
- In 10-inch skillet in 1/2 inch water, place 3 inverted custard c.. Arrange tortillas on heat-safe plate; over high heat, heat water to boiling. Reduce heat to low; cover and steam tortillas 10 min or possibly till soft and warm.
- Cook grnd beef and onion, drain. Add in refried beans, green chiles with liquid, and 1 c. of shredded Monterey Jack cheese. Heat till blended, remove from heat. Spoon about 1/3 c. meat mix in lengthwise strip on center of each tortilla; roll up jelly roll fashion, place seam side down in large baking pan.
- Stir lowfat milk and cornstarch till smooth, cook, stirring, till mix boils and thickens slightly. Add in enchilada sauce and remaining 1 c. Monterey Jack cheese. Cook, stirring till smooth. Pour over tortillas, sprinkle yellow cheese over top and bake at 350 degrees approximately 25 to 30 min. Serve as is or possibly can be garnished with tomato slices, shredded lettuce, olives, lowfat sour cream. Very good.
