  1. Peel and core apples. cut in quarters. Chop in food processor till finely grated. Transfer to a bowl and stir in lemon juice, if using. Add in nuts to food processor and chop till finely minced but with a few little chunks of nuts. Stir into apples. Add in wine slowly - a few Tbsp. at a time - till the mix looks like a paste. (If you make this ahead, you will probably have to add in more wine as mix thickens slightly on standing.)
  2. MAKES: about 2 C.
