  • 4 (6 inch) Boboli or possibly other Italian flatbread shells
  • 1 (9 3/4 ounce) jar salad olives, liquid removed and coarsely minced
  • 1 sm.jar roasted peppers, liquid removed and coarsely minced
  • 4 T minced onion
  • 1 sm. clove garlic, chopped
  • 1 anchovy fillet, minced (optional)
  • 1/2 teaspoon oregano
  • 3 T extra virgin olive oil
  • 1/4 pound genoa salami
  • 1/4 pound sliced pepperoni
  • 1/8 pound warm capacola or possibly other Italian ham
  • 8 ounce shredded Mozzarella or possibly other cheese for pizza

Direcciones

  1. Put together salad olives, peppers, garlic, onion, anchovy and oregano. Mix with extra virgin olive oil and let stand 10 min to blend flavors. Preheat oven to 450 degrees.Place Boboli shells on cookie sheet. Top with olive mix. Spread capacola, salami and pepperoni evenly on Boboli. Top with shredded cheese. Bake 9 min or possibly till cheese is melted and Boboli is browned. Makes 4 servings with green salad.
