Black and Blueberry Pie

If you caught Marie’s roundup of our Cuddle Cake last week, you’ll know that she has imagined Rose and Woody reading our bake along blog posts, shaking there heads, and wondering why we can’t follow instructions. I’m afraid my post this week will fit into that head shaking category. Our Back and Bluebeery Pie features a crust made with cream cheese. I didn’t even try it, but I did make a double batch of the berry filling. It may compromise my status as an Alpha Baker, but my new boss did provide this quote on my efforts, “You can say the Rector approves. . . mightily!” So I have that going for me.

%20rather%20than%20butter.%20(My%20grandmother%20used%20to%20use%20lard%20when%20the%20family%20lived%20on%20a%20ranch,%20not%20vegan%20at%20all.)%3C/p%3E%3Cp%3EEnough%20about%20my%20bootleg%20crust.%20This%20filling%20is%20amazing!!!%20I%20have%20never%20been%20a%20fan%20of%20berry%20pies,%20but%20I%20couldn%E2%80%99t%20have%20been%20happier%20with%20the%20result.%20I%20used%20frozen%20blackberries%20and%20fresh%20blueberries%20(on%20sale%20this%20week),%20and%20the%20outcome%20was%20black%20and%20blue%20perfection.%20The%20filling%20was%20fruity%20and%20stayed%20where%20it%20should%20when%20the%20pie%20was%20sliced.%20It%20didn%E2%80%99t%20run;%20it%20didn%E2%80%99t%20flatten%20out.%20A%20real%20winner.%3C/p%3E%3Cp%3EMy%20second%20batch%20of%20filling%20went%20into%20fruit%20pierogi.%20The%20church%20staff%20had%20a%20post-Epiphany%20party,%20because%20there%20just%20isn%E2%80%99t%20time%20for%20a%20staff%20party%20while%20you%E2%80%99re%20getting%20ready%20to%20celebrate%20Christmas%20with%201000+%20of%20your%20closest%20friends.%20One%20of%20my%20colleagues%20asked%20if%20I%20planned%20to%20bring%20pierogi%20to%20our%20potluck%20dinner.%20That%20started%20the%20wheels%20turning.%3C/p%3E%3Cp%3EI%E2%80%99ve%20made%20fruit%20pierogi%20before,%20but%20this%20was%20the%20nicest%20fruit%20filling%20I%E2%80%99ve%20ever%20worked%20with.%20When%20you%E2%80%99re%20trying%20to%20wrap%20pastry%20around%20a%20filling,%20the%20firmer%20the%20filling,%20the%20better.%20I%20cooked%20it%20on%20the%20stovetop%20over%20medium%20heat%20for%2015-%2020%20minutes,%20and%20then%20chilled%20it%20before%20turning%20it%20into%20the%20Polish%20specialty.%20%20I%20boiled%20the%20pierogi,%20and%20then%20browned%20them%20in%20butter.%20I%20served%20them%20with%20a%20sauce%20made%20with%20sour%20cream%20and%20brown%20sugar%20(to%20taste%20%E2%80%93%20about%202%20cups%20sour%20cream%20to%20about%201/2%20cup%20light%20brown%20sugar).%20This%20sauce%20is%20great%20on%20fresh%20fruit%20too.%3C/p%3E%3Cp%3EThe%20Black%20and%20Blueberry%20Pie%20filling%20was%20a%20big%20hit,%20twice!%3C/p%3E%3Cp%3EIn%20most%20of%20my%20food%20related%20blog%20posts,%20you%E2%80%99ll%20find%20a%20recipe,%20but%20not%20in%20posts%20about%20The%20Baking%20Bible.%20I%20have%20the%20Kindle%20version,%20and%20I%20think%20you%E2%80%99ll%20find%20many%20recipes%20you%E2%80%99ll%20want%20to%20try.%20Consider%20adding%20it%20to%20your%20collection.%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
