Receta Black Bean And Corn Relish

Ingredientes
- 1 x (15-oz) (425 g) can black beans, rinsed and well liquid removed
- 1 1/2 c. (225 g) cooked fresh corn, cut from 3 ears of corn
- 3 x scallions, white part and 1 inch (2.5 cm) green, minced
- 1/3 x to 1/2 c. (48 to 56 g) cilantro leaves, chopped
- 2 Tbsp. (30 ml) extra virgin olive oil
- 2 Tbsp. (30 ml) fresh lemon juice
- 1/2 tsp (2.5 ml) salt (optional) freshly grnd pepper to taste
Direcciones
- Combine the beans and corn in a serving bowl. Stir in scallions and cilantro, starting with 1/3 c. (48 g) and adding more to taste Drizzle mix with extra virgin olive oil and lemon juice. Stir well. Add in salt (if using) and pepper. Cover and chill till ready to use.
