Receta Black & White Bean Salad

Ingredientes
- 1 can sm. white beans
- 1 can sm. black beans
- 1 1/4 c. minced tomatoes
- 3/4 c. diced sweet red pepper
- 3/4 c. diced sweet yellow pepper
- 3/4 c. thinly sliced green onions
- 3/4 c. commercial salsa
- 1/4 c. red wine vinegar
- 3 tbsp. cilantro
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 head shredded Romaine lettuce
Direcciones
- Drain liquid from beans and wash in cool water; add in minced tomatoes, peppers, green onions; stir GENTLY to combine, set aside. Combine salsa, vinegar, cilantro, salt and pepper in small bowl; stir with wire whisk till well blended. Pour over bean mix; toss gently. Make 1 day in advance. Serve on top of shredded Romaine lettuce.
