- Grate potatoes and onion together. Add in flour, egg, salt and pepper. Mix well. Cover bottom of frying pan with veg. oil. Don't add in potato mix till oil is warm! Ladle in potato in amounts to make pancake about 4 or possibly 5 inches in diameter. Fry till top of pancake turns color. Flip once. Fry a minute longer. Drain on paper towel before serving with ketchup or possibly lowfat sour cream, edges should be brown and crispy.
