Ingredientes
- 1/2 c. butter
- 1/2 c. coconut oil
- 2 c. sugar
- 2 farm fresh eggs
- 1 c. non-fat plain Greek yogurt
- 1/2 t. pure vanilla
- 1-1/2 c. plus 2 T. flour
- 1 t. baking powder
- 1/4 t. fine sea salt
- 1 c. frozen blueberries (thawed)
- 3/4 c. granola (I used a homemade one with flax and chia seeds, but use whatever you like.)

,%20I%20will%20get%20a%20piece%20of%20%E2%80%9Creduced%20fat%E2%80%9D%20cinnamon%20coffee%20cake%20because%20it%20makes%20me%20think%20I%20am%20eating%20healthier.%3C/p%3E%3Cp%3EThis%20week,%20I%20was%20finally%20getting%20around%20to%20%20individually%20freezing%20our%2015%20lbs.%20of%20blueberries%20in%201-2%20cup%20seal-a-meal%20bags.%20%20%20%20(I%20say%20finally%20because%20I%20have%20had%20a%20huge%20bag%20of%20these%20loose%20beauties%20in%20the%20freezer%20taking%20up%20a%20lot%20of%20room%E2%80%94seriously,%20like%20a%20garbage%20bag%20full%20of%20them.)%3C/p%3E%3Cp%3EI%20had%20a%20few%20stragglers%20left%20over%20from%20the%20seal-a-meal-athon,%20so%20I%20thought%20I%20would%20whip%20something%20up%20for%20breakfast%20the%20next%20morning.%3C/p%3E%3Cp%3EWhat%20usually%20comes%20to%20mind%20when%20you%20have%20blueberries%20on%20hand?%20%20%20Muffins.%20%20%20But,%20I%20always%20make%20muffins.%3C/p%3E%3Cp%3EAnd,%20my%20new%20goal%20is%20to%20actually%20utilize%20all%20my%20cookbooks%20for%20new%20recipes%20and%20recipes%20that%20I%20can%20adapt.%20%20%20(OK,%20what%20I%20really%20mean%20is%20%E2%80%9Cto%20make%20better.%E2%80%9D)%3C/p%3E%3Cp%3EI%20randomly%20pulled%20down%20A%20Thyme%20To%20Remember%20by%20The%20Dallas%20County%20Medical%20Society%20Alliance.%20%20%20It%20isn%E2%80%99t%20a%20Junior%20League%20cookbook,%20but%20it%20was%20close%20enough%20when%20I%20bought%20it%20on%20a%20long%20ago%20trip%20to%20Dallas.%20%20I%20found%20a%20blueberry%20coffee%20cake%20recipe.%3C/p%3E%3Cp%3EThe%20sidebar%20by%20the%20recipe%20%20(really%20it%20is%20subtext)%20%20stated:%3C/p%3E%3Cp%3EMy%20mother%20always%20told%20me%20to%20get%20up%20in%20the%20morning%20with%20my%20husband,%20put%20a%20smile%20on%20my%20face%20and%20fix%20him%20a%20hot%20breakfast%20before%20he%20goes%20to%20work.%3C/p%3E%3Cp%3EMy%20how%20times%20have%20changed.%20%20%20Enough%20said.%3C/p%3E%3Cp%3ESo,%20with%20these%20changing%20times%20in%20mind,%20I%20wanted%20to%20take%20this%20somewhat%20vintage%20recipe%20and%20adapt%20it%20to%20our%20lifestyle.%20%20%20I%20halved%20the%20butter,%20added%20coconut%20oil,%20Greek%20yogurt,%20and%20took%20out%20the%20brown%20sugar%20filling%20and%20added%20granola.%3C/p%3E%3Cp%3EHere%20it%20is:%3C/p%3E%3Cp%3EBlueberry-Granola%20Coffee%20Cake%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees;%20%20spray%20a%20bundt%20pan%20with%20a%20floured%20cooking%20spray%20like%20Bakers%E2%80%99%20Joy%20(or%20grease%20and%20flour%20it).%3C/p%3E%3Cp%3ECream%20the%20butter,%20coconut%20oil%20and%20sugar%20together%20until%20soft%20and%20fluffy.%20%20%20%20Add%20the%20eggs,%20one%20at%20a%20time,%20and%20beat%20well.%20%20%20Add%20yogurt%20and%20vanilla.%20%20%20Mix%20to%20combine.%3C/p%3E%3Cp%3EIn%20a%20separate%20bowl,%20whisk%20together%20flour,%20baking%20powder,%20and%20salt.%20%20%20%20Add%20flour%20mixture%20to%20the%20batter%20and%20mix%20well.%20%20%20%20Fold%20in%20blueberries.%3C/p%3E%3Cp%3ESpoon%20half%20the%20batter%20into%20the%20bundt%20pan,%20smoothing%20lightly%20with%20a%20spatula.%20%20%20%20Evenly%20sprinkle%20on%20granola.%20%20%20%20Spoon%20in%20remaining%20batter%20and%20smooth%20it%20out.%3C/p%3E%3Cp%3EBake%20for%2050-60%20minutes%20or%20until%20%20a%20toothpick%20%20comes%20out%20clean.%20%20%20Cool%20in%20the%20pan%20on%20a%20wire%20rack%20for%2010-15%20minutes.%20%20%20Remove%20from%20the%20pan.%3C/p%3E%3Cp%3EIt%20stuck%20a%20bit,%20but%20not%20too%20worse%20for%20wear.%3C/p%3E%3Cp%3EWait%20for%20breakfast.%3C/p%3E%3Cp%3EAlso,%20just%20a%20reminder%20to%20send%20good%20thoughts%20to%20Abigail.%3C/p%3E%3Cp%3EHere%20is%20the%20virtual%20flower%20I%20am%20sending%20her%20way%20today.%3C/p%3E%3Cp%3EAbby,%20this%20is%20your%20flower%20for%20today.%20It%20is%20a%20rose%20called%20%E2%80%9CBetty%20Boop.%E2%80%9D%20%20%20%20%20It%20is%20just%20getting%20ready%20to%20bloom.%3C/p%3E){kind=link}
