- 8 oz. cream cheese softened (I used the 1/3 Less Fat variety.)
- 2 sticks butter, softened
- 3 c. sugar
- 8 eggs
- 3 T. fresh lemon juice
- 1 T. lemon zest
- 1 t. vanilla extract
- 3 c. flour
- 1 t. baking powder
- 1/2 t. salt
- 1/2 t. cinnamon
- 3 c. frozen blueberries
- 1/4 c. raw cane sugar (or sanding sugar)

.%20%20I%20was%20hoping%20to%20check%20out%20some%20local%20restaurants%20while%20we%20were%20there.%3C/p%3E%3Cp%3EOnce%20we%20arrived,%20we%20loved%20our%20rental%20house%20with%20its%20two%20decks%20and%20its%20view%20of%20the%20water.%20%20We%20never%20left%20the%20place%20and%20our%20only%20real%20activity%20was%20moving%20from%20the%20upper%20deck%20to%20the%20lower%20deck%20when%20it%20got%20too%20hot.%20%20I%20never%20even%20put%20on%20a%20pair%20of%20shoes%20once%20we%20got%20there!%3C/p%3E%3Cp%3EIt%20was%20the%20most%20relaxing%20weekend%20ever.%20%20We%20read,%20researched%20a%20few%20things%20on%20the%20internet,%20talked,%20and%20RELAXED.%3C/p%3E%3Cp%3ERemembering%20all%20of%20this,%20we%20jumped%20at%20the%20chance%20to%20house%20sit%20for%20some%20friends%20at%20this%20same%20lake%20later%20this%20month.%20%20Really,%20who%20is%20doing%20who%20a%20favor%20here?%3C/p%3E%3Cp%3EI%20had%20a%20day%20off%20on%20Friday,%20so%20I%20thought%20I%20ought%20to%20start%20preparing%20a%20few%20food%20items%20to%20take%20with%20us.%20%20I%20wanted%20things%20that%20I%20could%20make%20in%20bulk%20and%20that%20would%20freeze%20easily.%20%20I%20also%20was%20looking%20for%20easy%20breakfast%20items%20that%20we%20could%20enjoy%20with%20coffee%20as%20we%20watched%20the%20sunrise%20from%20our%20adopted%20deck.%3C/p%3E%3Cp%3EI%20had%20a%20bag%20of%20lemons%20that%20needed%20used%20and%20I%20still%20had%20blueberries%20in%20the%20freezer.%20%20(I%20really%20need%20to%20use%20up%20this%20final%20bag%20before%20we%20reorder%20with%20Bithell%20Farms.)%3C/p%3E%3Cp%3EI%20found%20a%20Blueberry%20Lemon%20Bread%20recipe%20in%20one%20of%20my%20Junior%20League%20Cookbooks%20and%20I%20thought%20I%20could%20adapt%20it%20into%20muffins.%3C/p%3E%3Cp%3EBlueberry%20Lemon%20Spice%20Muffins%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%20%20In%20stand%20mixer%20with%20paddle%20attachment,%20cream%20together%20cheese%20and%20butter%20until%20very%20soft%20and%20velvety.%20%20Add%20sugar%20and%20continue%20to%20mix.%20%20Add%20eggs%20one%20at%20a%20time,%20beating%20well%20after%20each.%20%20Add%20lemon%20juice,%20lemon%20zest,%20and%20vanilla.%3C/p%3E%3Cp%3EIn%20a%20separate%20mixing%20bowl,%20whisk%20together%20dry%20ingredients%20(flour,%20baking%20powder,%20salt%20and%20cinnamon).%20%20Once%20whisked,%20carefully%20add%20to%20creamed%20mixture%20and%20beat%20until%20just%20incorporated.%3C/p%3E%3Cp%3ERemove%20bowl%20from%20mixer%20stand%20and%20carefully%20fold%20in%20blueberries.Fill%20muffin%20tins%20about%203/4%20full%20and%20sprinkle%20sanding%20sugar%20on%20top.Bake%20for%2020-25%20minutes%20until%20peaked%20and%20golden%20brown.%20%20%20Remove%20from%20oven%20and%20let%20cool%20in%20pan%20for%2015%20minutes.Remove%20from%20pan%20and%20put%20some%20in%20the%20freezer%20so%20you%20won%E2%80%99t%20consume%20them%20all%20at%20once!%3C/p%3E%3Cp%3EThis%20recipe%20yielded%20two%20dozen%20regular%20size%20muffins%20and%20one%20dozen%20jumbo%20muffins.%3C/p%3E%3Cp%3EServe%20with%20coffee%20or%20tea.%3C/p%3E%3Cp%3EThese%20will%20be%20great%20for%20those%20mornings%20we%20get%20up%20early.%20%20But%20what%20about%20sleeping%20in?%20%20I%20think%20I%20will%20take%20ingredients%20for%20my%20Garden%20Harvest%20Frittata%20%20(that%20I%20recently%20won%20a%20second%20prize%20for%20in%20a%20cooking%20contest).%20%20Since%20it%20calls%20for%20okra%20and%20I%20just%20picked%20some%20from%20the%20garden%20(I%20think%20it%20is%20even%20too%20hot%20for%20okra%20this%20year,%20but%20I%20picked%20a%20%E2%80%9Cmess%E2%80%9D),%20I%20will%20whip%20this%20up%20for%20a%20Sunday%20morning%20brunch%20while%20we%20are%20there.%3C/p%3E%3Cp%3EIf%20I%20get%20really%20energetic%20today,%20I%20may%20whip%20up%20so%20more%20muffins%20so%20we%20can%20have%20some%20variety%20to%20choose%20from.%20%20Maybe%20some%20Morning%20Glory%20Muffins%20or%20even%20some%20great%20banana%20or%20choco-cherry%20muffins.%3C/p%3E%3Cp%3EI%20can%E2%80%99t%20wait%20until%20we%20go!%3C/p%3E){kind=link}
