  • 1 x green bell pepper, cut into pcs

  • 1/4 c. minced celery Dash dry thyme Dash grnd nutmeg Dash garlic pwdr Dash Italian seasoning Dash dry rosemary Salt and black pepper to taste About 1 1/2 pounds boneless chicken breasts, halved All-purpose flour to coat chicken

Direcciones

  1. Add in 2 Tbsp. of the oil to a large skillet. Over medium heat, cook the tomatoes, onion, green pepper, green onion, celery, herbs and spices, and salt and pepper till the vegetables are soft and reduced into a sauce, about half an hour.
  2. Meanwhile, in large bowl, coat the chicken in flour. In a separate skillet, heat the remaining 6 Tbsp. of the vegetable oil over medium heat, and fry the chicken pcs till golden. Remove the chicken from the oil, reserving the oil. Drain chicken on paper towels and add in chicken to the tomato-vegetable sauce and simmer 15 min.
  3. In the reserved oil, fry the plantains till golden; drain on paper towels.
