  1. Soak bread crumbs in warmed lowfat milk. Add in the salt, pepper, well beaten Large eggs, and grated cheese. Have a frying pan heated and heat 1 Tbsp. butter in it. Into this pour the egg mix and place on top of range where it will cook proportionately. When nicely browned underneath, place the pan in oven to finish cooking on top. Remove from oven, fold and turn on a warm platter. This makes an excellent lunch or possibly supper dish. While cooking the omelet on top of the range it is well to slip a spatula under the mix at times, while the bottom is browning to keep it from burning.
