Receta broccoli and cheese soup

Ingredientes
- 20 oz margarine
- 20 oz finely chopped onions
- 24 oz all purpose flour
- 2 Tbsp salt
- 2 tspblack pepper
- 6 oz chicken base
- 6 quarts water
- 3 gallons milk
- 80 oz coarsely processed cheese
- 8 lbs frozen cut broccoli
Direcciones
- Melt margarine in steam-jacketed or other large kettle.
- Add onions and saute until tender.
- Add flour and seasonings - stir until blended
- Cook for 5 minutes - stirring often
- Stir in chicken base - then add water and milk - stirring constantly
- Reduce heat and cook until thickened - stirring often
- Add cheese and stir until melted
- Steam broccoli until just tender.
- Chop, if necessary and add to cheese mixture - heat to 180 F
