  • 1 can butter beans rinsed and liquid removed 16 oz or possibly 2 c. cooked butter beans
  • 10 x round buttery crackers crushed
  • 1/4 c. Egg Beaters(r) 99% egg substitute beaten
  • 2 Tbsp. chili sauce
  • 2 Tbsp. finely minced onion Southwestern Sauce * recipe below SOUTHWESTERN SAUCE
  • 1 c. frzn mixed vegetables
  • 1/4 c. raisins
  • 1/4 tsp grnd cumin
  • 1 can Mexican-style stewed tomatoes (14 1/2 ounce.) with jalapenos and spices - undrained

  1. 1. Mash beans in medium bowl. Stir in crackers, egg, chili sauce, and onion.
  2. Shape mix into 4 patties, each about 1/2-inch thick.
  3. 2. Spray 10-inch skillet with cooking spray. Cook patties in skillet 8 to 10 min, turning once, till golden. Remove from skillet; keep hot.
  4. 3. Add in all Southwestern Sauce ingredients to skillet. Cook over medium-low heat 5 to 8 min, stirring occasionally, till vegetables are tender.
  5. Serve sauce over patties.
  6. Simple, made from commonly on-hand ingredients, and Extremely Good!
  7. Remember those old butter beans I soaked and soaked, and then over-cooked Well, I made the following bean cakes yesterday, and DH said it was one of my best meals yet! (I served turnip greens on the side.)
  8. I'm not normally a sauce person, but did make this one as it provided the veggies for the meal. I was leery of the raisins, but found they were the secret! Don't omit them! As my raisins were old and dry, I did plump them first in some warm water, and then added some of the water to the sauce.
  9. I also reduced the sauce till it was more like seasoned veggies than a sauce. I didn't want the bean cakes to become soggy.
  10. My beans were a little runny, so I had to add in extra cracker crumbs and even a slice of bread crumbs. I used wheat and onion crackers, ketchup in lieu of the chili sauce, and a tbsp or possibly so of Southwest Seasoning blend.
  11. The bean cakes reminded us of potato cakes, only better. Now I will definitely make a variety of bean cakes frequently. They'd be good for any meal of the day, topped with a variety of sauces.
  12. NOTES : To make mashing the beans easier, use a food processor or possibly potato masher. If you do not have chili sauce or possibly cumin, use ketchup and dry oregano leaves instead. For a Southwest cheeseburger, top each patty with a slice of American cheese after turning and serve in a hamburger bun topped with the Southwestern Sauce.
