Receta Buttermilk Oat Bran Muffins With Fruits

Ingredientes
- 2 c. Oat bran
- 1/2 c. Water
- 1 c. Buttermilk
- 4 Tbsp. Oil
- 1/4 c. Honey
- 2 x Large eggs
- 3 Tbsp. Grated orange, (fruit juice
- 1/4 c. Yellow raisins
- 1 1/2 c. Whole wheat flour
- 1 1/2 tsp Cinnamon
- 1 tsp Baking soda
- 1/2 tsp Baking pwdr
- 1 med banana coarsely mash
Direcciones
- In a large bowl, beat together first 6 ingredients till blended. Stir in orange and raisins. Stir together next 4 ingredients, add in to bran mix and beat just till blended. Do no overmix. Stir in banana. Divide batter between 18 paper-lined muffin cs and bake at 350-degrees for 25 min.
- Yields 18 muffins. About 125 calories per muffin
